  • 4 large large eggs
  • 1 cup boiled potatoes, diced Use leftovers or prepare fresh.
  • 2 cups fresh spinach, roughly chopped
  • 1 small onion, chopped Use yellow or white onion for sweetness.
  • 1/2 cup shredded cheese (mozzarella or cheddar) Substitute with your favorite cheese.
  • Salt and pepper, to taste
  • 1 tablespoon olive oil For sautéing.
  • 1 teaspoon herbs (optional, like basil or garlic powder) For added flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In an oven-safe skillet, heat olive oil over medium heat.
  3. Add chopped onions and sauté until translucent, about 3-4 minutes.
  4. Stir in diced potatoes and spinach, cooking until the spinach wilts, about 2-3 minutes.
  5. In a bowl, whisk together eggs, salt, and pepper. Add optional herbs for extra flavor.
  6. Pour the egg mixture over the potato and spinach mixture in the skillet, then sprinkle shredded cheese on top.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and cheese is melted.
  8. Remove from the oven, let cool slightly, then slice and serve warm.

Notes

Pair with a fresh side salad or crusty whole-grain bread. Feel free to substitute ingredients as desired.
