Preparation
- Preheat your oven to 400°F (200°C).
- In an oven-safe skillet, heat olive oil over medium heat.
- Add chopped onions and sauté until translucent, about 3-4 minutes.
- Stir in diced potatoes and spinach, cooking until the spinach wilts, about 2-3 minutes.
- In a bowl, whisk together eggs, salt, and pepper. Add optional herbs for extra flavor.
- Pour the egg mixture over the potato and spinach mixture in the skillet, then sprinkle shredded cheese on top.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set and cheese is melted.
- Remove from the oven, let cool slightly, then slice and serve warm.
