  • 3 tablespoons olive oil

Method
 

Preparation
  1. Wash the eggplant thoroughly and cut off the ends.
  2. Slice the eggplant into ½-inch thick rounds.
  3. In a large bowl, combine the eggplant slices, olive oil, salt, and pepper. Toss until each slice is well coated.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Place the eggplant slices directly on the grill grates.
  3. Grill for about 5-7 minutes on each side until tender and marked.
Serving
  1. Remove the eggplant from the grill and transfer to a serving platter.
  2. Add your favorite toppings and enjoy warm.

Notes

Ensure enough space between eggplant slices for even cooking. Let grilled eggplant rest for a few minutes before serving.
