  • 1 lb ground chicken You can substitute with ground turkey or black beans.
  • 1 tablespoon Cajun seasoning Adjust spice level to taste.
  • 1 medium onion, finely chopped
  • 1 medium bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes Can be canned or fresh.
  • ½ cup mayonnaise
  • to taste salt and pepper
  • 4 pieces burger buns or sandwich rolls

Preparation
  1. In a large skillet over medium heat, add a splash of olive oil.
  2. Once hot, throw in the chopped onion and bell pepper. Cook until soft and translucent, about 5-7 minutes.
  3. Add the ground chicken to the skillet, breaking it apart with a spatula. Sprinkle the Cajun seasoning over the chicken and mix well. Cook until browned and fully cooked, stirring occasionally.
  4. Stir in the minced garlic and diced tomatoes. Allow to simmer for about 3-5 minutes.
  5. Remove from heat and stir in mayonnaise until combined. Season with salt and pepper to taste.
  6. Load the flavorful chicken mixture onto burger buns and serve with your favorite toppings.
