  • 3 pieces ripe bananas (mashed) The riper the bananas, the sweeter your muffins will taste.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch salt
  • 3/4 cup sugar (or to taste)
  • 1 large egg (beaten)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup walnuts or chocolate chips (optional) For added taste.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter to the mashed bananas.
  4. Add baking soda and salt. Mix well.
  5. Stir in the sugar, beaten egg, and vanilla extract until well combined.
  6. Gently fold in the flour and mix until no dry flour is visible.
  7. Optionally, add walnuts or chocolate chips to the batter.
  8. Line a muffin tin with paper liners or grease it lightly with cooking spray.
  9. Pour the batter into the muffin cups, filling each about 2/3 full.
  10. Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  11. Allow the muffins to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.

Notes

For perfecting these muffins, choose overripe bananas, mix gently to avoid density, and experiment with flavors like nutmeg or additional chocolate chips.
