  • 2 cups diced boneless chicken thighs (or breasts)
  • ¼ cup soy sauce use low-sodium for a lighter option
  • 2 tablespoons sesame oil
  • 2 tablespoons honey or maple syrup
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 cup colorful bell peppers, sliced
  • 1 cup broccoli florets
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons sesame seeds
  • 2 pieces green onions, chopped
  • 2 cups cooked rice or noodles as base

Method
 

Preparation
  1. Cut your boneless chicken into bite-sized pieces to ensure they cook evenly and quickly.
  2. In a mixing bowl, combine the soy sauce, sesame oil, honey (or maple syrup), minced garlic, and ginger. Add the diced chicken and let it marinate for at least 10 minutes.
Cooking
  1. Heat a non-stick skillet or wok over medium-high heat. Add the marinated chicken and cook for 5-7 minutes until it’s golden brown and cooked through.
  2. Toss in your sliced bell peppers and broccoli florets. Stir fry for 3-4 minutes until vegetables are tender yet crisp.
  3. In a small bowl, mix cornstarch and water to create a slurry. Pour this mixture into the skillet and stir to thicken the sauce.
  4. Remove from heat. Top with sesame seeds and chopped green onions.
Serving
  1. Spoon the delightful mixture over your prepared rice or noodles and enjoy while it’s hot.

Notes

For an authentic experience, consider substituting chicken for turkey or tofu for a vegetarian version. Cooking the chicken in batches ensures even cooking.
