Preparation
- Clear a section on your kitchen counter and gather all your ingredients.
- In a medium-sized mixing bowl, combine the pumpkin puree, peanut butter (or almond butter), honey (or maple syrup), pumpkin spice, vanilla extract, and a pinch of salt. Stir until fully blended.
- Gradually fold in the rolled oats. Stir until the mixture is well combined and the oats are evenly coated.
- Using your hands or a spoon, scoop out portions of the mixture and form them into cookie shapes. Place them on a baking sheet lined with parchment paper.
- For about 10-15 minutes, place the cookies in the refrigerator to firm up. You can speed up this process by placing them in the freezer for 5-10 minutes if needed.
- Once the cookies have set, serve them at room temperature or chilled.
Notes
Store in an airtight container in the refrigerator for up to a week. For longer storage, freeze for up to three months.
