  • 1/2 cup pumpkin puree Use pure pumpkin puree, not pie filling.
  • 1/2 cup peanut butter or almond butter Ensure nut butters are halal-compliant.
  • 1/4 cup honey or maple syrup
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon vanilla extract
  • a pinch of salt

Method
 

Preparation
  1. Clear a section on your kitchen counter and gather all your ingredients.
  2. In a medium-sized mixing bowl, combine the pumpkin puree, peanut butter (or almond butter), honey (or maple syrup), pumpkin spice, vanilla extract, and a pinch of salt. Stir until fully blended.
  3. Gradually fold in the rolled oats. Stir until the mixture is well combined and the oats are evenly coated.
  4. Using your hands or a spoon, scoop out portions of the mixture and form them into cookie shapes. Place them on a baking sheet lined with parchment paper.
  5. For about 10-15 minutes, place the cookies in the refrigerator to firm up. You can speed up this process by placing them in the freezer for 5-10 minutes if needed.
  6. Once the cookies have set, serve them at room temperature or chilled.

Notes

Store in an airtight container in the refrigerator for up to a week. For longer storage, freeze for up to three months.
