For the custard
  • 1 cup pumpkin puree
  • 4 large eggs
  • 1 cup milk (or almond milk)
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
For the French toast
  • 8 slices thick bread (like brioche or challah)
  • to taste Butter for cooking
  • to taste Maple syrup, for serving

Method
 

Preparation
  1. In a large mixing bowl, whisk together the pumpkin puree, eggs, milk, vanilla extract, cinnamon, nutmeg, and ginger until smooth.
  2. Preheat a skillet or griddle over medium heat and melt a little butter.
Cooking
  1. Dip each slice of bread into the pumpkin custard for about 30 seconds per side, allowing it to soak up the flavors.
  2. Place the soaked bread slices onto the hot skillet. Cook for about 2-3 minutes per side or until they’re golden brown and slightly crispy on the outside.
Serving
  1. Once cooked, serve your French toast warm, drizzled with maple syrup and your choice of toppings.

Notes

For the best results, use thick bread like brioche or challah. You can also experiment with spices or toppings like whipped cream.
