- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the pumpkin puree, sugar, vegetable oil, and eggs. Mix well until smooth.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be cautious not to over-mix!
- Pour the batter into a greased 9×5-inch loaf pan.
- Place in the oven and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, allow the pumpkin bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use room temperature ingredients for a smoother batter. If desired, add nuts, chocolate chips, or dried fruits. Store leftovers wrapped tightly; it stays fresh for about 3 days at room temperature or up to a week in the refrigerator.
