  • 1 cup pumpkin puree Use canned or fresh!

  • 1 1/2 cups all-purpose flour The base for your bread.
  • 1 teaspoon baking soda Helps the bread rise.

  • 1/2 teaspoon nutmeg A touch of warmth.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the pumpkin puree, sugar, vegetable oil, and eggs. Mix well until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be cautious not to over-mix!
  5. Pour the batter into a greased 9×5-inch loaf pan.
  6. Place in the oven and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Once baked, allow the pumpkin bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use room temperature ingredients for a smoother batter. If desired, add nuts, chocolate chips, or dried fruits. Store leftovers wrapped tightly; it stays fresh for about 3 days at room temperature or up to a week in the refrigerator.
