Preparation
- Start by brewing a cup of coffee and allow it to cool completely.
- In a medium bowl, combine Greek yogurt, protein powder, and mascarpone cheese. Stir until smooth.
- Add sweetener if preferred, and mix until fully blended.
- If using ladyfinger biscuits, quickly dip them into the cooled coffee and layer them at the bottom of a serving dish.
- Top with a layer of your yogurt mixture. Repeat until all ingredients are used, finishing with the yogurt layer.
- Cover the pudding and refrigerate for at least 2 hours.
- Before serving, dust the top with cocoa powder and sprinkle cacao nibs or dark chocolate shavings.
- Serve and enjoy your protein-packed dessert!
Notes
Store covered in the refrigerator for up to 3 days. Freezing possible, but texture may change. Let sit at room temperature for 15-20 minutes before enjoying leftovers.
