  • 1 cup Greek yogurt
  • 1 cup protein powder (vanilla or chocolate)
  • 1 cup brewed coffee (cooled) Make sure it is cooled before use
  • 2 tablespoons cocoa powder
  • 1 tablespoon sweetener (optional) Choose according to preference
  • 1-2 tablespoons mascarpone cheese Can substitute with cream cheese or thicker Greek yogurt

  • Ladyfinger biscuits For layering
  • Cacao nibs or dark chocolate shavings For garnishing

Method
 

Preparation
  1. Start by brewing a cup of coffee and allow it to cool completely.
  2. In a medium bowl, combine Greek yogurt, protein powder, and mascarpone cheese. Stir until smooth.
  3. Add sweetener if preferred, and mix until fully blended.
  4. If using ladyfinger biscuits, quickly dip them into the cooled coffee and layer them at the bottom of a serving dish.
  5. Top with a layer of your yogurt mixture. Repeat until all ingredients are used, finishing with the yogurt layer.
  6. Cover the pudding and refrigerate for at least 2 hours.
  7. Before serving, dust the top with cocoa powder and sprinkle cacao nibs or dark chocolate shavings.
  8. Serve and enjoy your protein-packed dessert!

Notes

Store covered in the refrigerator for up to 3 days. Freezing possible, but texture may change. Let sit at room temperature for 15-20 minutes before enjoying leftovers.
