Preparation
- Preheat your oven to 350°F (175°C), and lightly grease a baking dish or line it with parchment paper.
- In a food processor, combine the rinsed black beans, cocoa powder, oats, peanut butter (or almond butter), honey (or maple syrup), vanilla extract, baking powder, and salt. Blend until you achieve a smooth consistency.
- Transfer the batter to a mixing bowl and gently fold in the chocolate chips until evenly distributed.
- Pour the mixture into the prepared baking dish, smoothing it out to create an even layer.
- Bake in the preheated oven for about 20 minutes, or until the edges begin to pull away slightly from the dish.
- Allow the brownie bites to cool completely in the dish before cutting them into small squares or bites.
- Enjoy these delightful treats with a glass of cold milk or your favorite dairy alternative!
Notes
These Protein Brownie Bites are best enjoyed fresh but can last in the fridge for up to 5 days in an airtight container. For longer storage, freeze individual portions for up to three months! Reheat in the microwave for about 10-15 seconds for that warm, gooey goodness.
