  • 1 cup black beans, rinsed and drained
  • 1/2 cup cocoa powder
  • 1/2 cup oats
  • 1/2 cup peanut butter or almond butter Nut-free version can use sunflower seed butter.
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Preparation
  1. Preheat your oven to 350°F (175°C), and lightly grease a baking dish or line it with parchment paper.
  2. In a food processor, combine the rinsed black beans, cocoa powder, oats, peanut butter (or almond butter), honey (or maple syrup), vanilla extract, baking powder, and salt. Blend until you achieve a smooth consistency.
  3. Transfer the batter to a mixing bowl and gently fold in the chocolate chips until evenly distributed.
  4. Pour the mixture into the prepared baking dish, smoothing it out to create an even layer.
  5. Bake in the preheated oven for about 20 minutes, or until the edges begin to pull away slightly from the dish.
  6. Allow the brownie bites to cool completely in the dish before cutting them into small squares or bites.
  7. Enjoy these delightful treats with a glass of cold milk or your favorite dairy alternative!

Notes

These Protein Brownie Bites are best enjoyed fresh but can last in the fridge for up to 5 days in an airtight container. For longer storage, freeze individual portions for up to three months! Reheat in the microwave for about 10-15 seconds for that warm, gooey goodness.
