Preparation
- Start by washing and dicing your potatoes, and chop the onion and bell pepper. This will make the cooking process smoother.
Cooking
- In a large skillet over medium heat, add the olive oil. Once hot, toss in the diced potatoes. Season with a pinch of salt and pepper, and cook for about 10-15 minutes, stirring occasionally, until they become golden brown and crispy.
- Push the potatoes to the side of the skillet, add a little more olive oil, and add the sliced Halal sausage. Sauté for 5-7 minutes until they start to brown and caramelize.
- Stir the onions and bell pepper into the skillet, cooking until they are soft and fragrant, about 5-6 minutes.
- Gently mix everything together, taste, and adjust seasoning as necessary. Cook for another minute or two to let the flavors meld.
- Once everything is cooked perfectly, serve hot and enjoy!
Notes
For substitutions, swap Halal sausage for grilled chicken or a plant-based option. Be patient while cooking the potatoes for the perfect golden crust, and watch the vegetables to avoid overcooking. Leftovers can be stored in an airtight container in the fridge for 3-4 days and reheated with a splash of olive oil for best texture.
