Preparation
- Wash and dice the potatoes into bite-sized cubes.
- Chop the onion and bell pepper and set them aside.
Cooking
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the sausage to the skillet and cook for about 5-7 minutes, breaking it apart with a spatula as it browns.
- Once the sausage is browned, add the diced potatoes to the skillet and toss everything together.
- Sprinkle in the garlic powder, paprika, salt, and pepper, then stir well to combine all the flavors.
- Add the chopped onion and bell pepper, cover the skillet and cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender and golden brown.
- Once cooked, garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat on the stove or microwave until warmed through.
