  • 4 medium potatoes, diced about 2 pounds
  • 1 lb sausage (chicken, turkey, or plant-based) choose your preference
  • 1 whole onion, chopped
  • 1 whole red bell pepper, diced
  • 2 tablespoons olive oil for cooking
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt and pepper
Garnish (Optional)
  • to taste fresh parsley for garnish

Method
 

Preparation
  1. Wash and dice the potatoes into bite-sized cubes.
  2. Chop the onion and bell pepper and set them aside.
Cooking
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Add the sausage to the skillet and cook for about 5-7 minutes, breaking it apart with a spatula as it browns.
  3. Once the sausage is browned, add the diced potatoes to the skillet and toss everything together.
  4. Sprinkle in the garlic powder, paprika, salt, and pepper, then stir well to combine all the flavors.
  5. Add the chopped onion and bell pepper, cover the skillet and cook for about 15-20 minutes, stirring occasionally, until the potatoes are tender and golden brown.
  6. Once cooked, garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat on the stove or microwave until warmed through.
