  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar, plus more for dusting
  • 2 cups all-purpose flour
  • 1/2 cup pistachio nuts, finely chopped
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy, about 2-3 minutes.
  3. Add the vanilla extract and salt, mixing until well combined.
  4. Gradually add the all-purpose flour and finely chopped pistachios, mixing until a soft dough forms.
  5. Scoop tablespoon-sized portions and roll into balls. Place on the prepared baking sheet, leaving at least 2 inches between each cookie.
  6. Bake for 12-15 minutes or until the edges are lightly golden.
  7. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
  8. Once cooled, dust each cookie liberally with additional powdered sugar.

Notes

Ensure butter is at room temperature for best results. Store cookies in an airtight container for up to a week at room temperature or up to three weeks in the fridge. Cookies can be frozen for up to a month.
