Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream the softened butter and powdered sugar together until light and fluffy, about 2-3 minutes.
- Add the vanilla extract and salt, mixing until well combined.
- Gradually add the all-purpose flour and finely chopped pistachios, mixing until a soft dough forms.
- Scoop tablespoon-sized portions and roll into balls. Place on the prepared baking sheet, leaving at least 2 inches between each cookie.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
- Once cooled, dust each cookie liberally with additional powdered sugar.
Notes
Ensure butter is at room temperature for best results. Store cookies in an airtight container for up to a week at room temperature or up to three weeks in the fridge. Cookies can be frozen for up to a month.
