Ingredients
  

For the bars
  • 1 package pistachio pudding mix
  • 1 cup sugar
  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 pinch salt
For topping (optional)
  • 1/2 cup chopped pistachios For added crunch.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan with non-stick spray or line it with parchment paper.
  2. In a mixing bowl, combine the flour, baking powder, and salt. Set this mixture aside.
  3. In a separate bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract, mixing well.
  5. Add in the pistachio pudding mix and mix until just combined.
  6. Gradually add the dry flour mixture to the wet ingredients, blending until a dough forms.
  7. Spoon the dough into the prepared baking pan, spreading it evenly.
  8. Bake for about 25-30 minutes or until golden and a toothpick inserted in the center comes out clean.
  9. Allow the bars to cool completely in the pan before cutting into squares.
  10. Optional: Sprinkle with chopped pistachios before serving.

Notes

For best results, use room temperature ingredients and avoid overmixing the dough. Store leftovers in an airtight container at room temperature for 3-4 days or refrigerate for up to a week.
