- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan with non-stick spray or line it with parchment paper.
- In a mixing bowl, combine the flour, baking powder, and salt. Set this mixture aside.
- In a separate bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract, mixing well.
- Add in the pistachio pudding mix and mix until just combined.
- Gradually add the dry flour mixture to the wet ingredients, blending until a dough forms.
- Spoon the dough into the prepared baking pan, spreading it evenly.
- Bake for about 25-30 minutes or until golden and a toothpick inserted in the center comes out clean.
- Allow the bars to cool completely in the pan before cutting into squares.
- Optional: Sprinkle with chopped pistachios before serving.
