  • 1 cups pineapple juice (fresh or canned)
  • 3 large eggs
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In a separate bowl, combine the softened butter, pineapple juice, eggs, and vanilla extract. Mix well until smooth.
  4. Gradually add the wet mixture to the dry ingredients, mixing until just blended. Avoid overmixing to keep the cake fluffy.
Baking
  1. Pour the batter into your prepared baking dish and spread it evenly.
  2. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center comes out clean.
Cooling and Serving
