Preparation
- Preheat the oven to 400°F (200°C).
- Pat the beef tenderloin dry with paper towels.
- In a small bowl, mix the salt and crushed black peppercorns. Rub this mixture all over the beef tenderloin.
Cooking
- In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the tenderloin and sear for about 2-3 minutes on each side, until a nice crust forms.
- Remove the skillet from heat. Spread Dijon mustard on the top of the tenderloin and sprinkle minced garlic on top.
- Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until it reaches your desired level of doneness.
- After removing from the oven, let the beef rest for 10 minutes.
- Slice the beef into 1-inch thick pieces and garnish with fresh herbs before serving.
Notes
For substitutions, you can use crushed green or white peppercorns and different mustard types. Ensure to let the meat rest after cooking for juicy results. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.
