Pecan Pie Balls

These bite-sized Pecan Pie Balls are the perfect no-bake treat for any occasion! Made with rich pecans, graham crackers, and a touch of sweetness, they're easy to make and irresistibly delicious.

Equipment

  • Mixing bowl
  • Baking sheet
  • Parchment paper or wax paper
  • Microwave-safe bowl (if coating with chocolate)

Ingredients
  

  • 1 ½ cups pecans finely chopped
  • 1 cup graham cracker crumbs
  • 1 cup powdered sugar
  • ½ cup brown sugar
  • 2 tablespoons unsalted butter melted
  • cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 ½ cups chocolate chips or candy melts optional, for coating

Instructions
 

  • Prepare the pecan mixture:
  • In a large mixing bowl, combine the chopped pecans, graham cracker crumbs, powdered sugar, and brown sugar. Stir until well mixed.
  • Add the melted butter, corn syrup, and vanilla extract. Mix until the ingredients come together to form a dough-like consistency.
  • Form the balls:
  • Using a tablespoon or cookie scoop, portion out the mixture and roll it into small balls. Place the balls on a baking sheet lined with parchment paper.
  • Chill:
  • Refrigerate the balls for at least 30 minutes to firm up.
  • Optional chocolate coating:
  • Melt the chocolate chips or candy melts in a microwave-safe bowl in 20-second intervals, stirring after each, until smooth.
  • Dip each chilled ball into the melted chocolate, using a fork or dipping tool to ensure an even coating. Place them back on the parchment paper to set.
  • Serve or store:
  • Once the chocolate coating is set (if used), the pecan pie balls are ready to serve. Store in an airtight container in the refrigerator for up to a week.
