Using a tablespoon or cookie scoop, portion out the mixture and roll it into small balls. Place the balls on a baking sheet lined with parchment paper.

Melt the chocolate chips or candy melts in a microwave-safe bowl in 20-second intervals, stirring after each, until smooth.
Dip each chilled ball into the melted chocolate, using a fork or dipping tool to ensure an even coating. Place them back on the parchment paper to set.

Once the chocolate coating is set (if used), the pecan pie balls are ready to serve. Store in an airtight container in the refrigerator for up to a week.
