Pecan Pie Balls

These bite-sized Pecan Pie Balls are the perfect no-bake treat for any occasion! Made with rich pecans, graham crackers, and a touch of sweetness, they're easy to make and irresistibly delicious.

Ingredients
  

  • 1 ½ cups pecans finely chopped
  • 1 cup graham cracker crumbs
  • 1 cup powdered sugar
  • ½ cup brown sugar
  • 2 tablespoons unsalted butter melted
  • cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 ½ cups chocolate chips or candy melts optional, for coating

Equipment

  • Mixing bowl
  • Baking sheet
  • Parchment paper or wax paper
  • Microwave-safe bowl (if coating with chocolate)

Method
 

  1. Prepare the pecan mixture:
  2. In a large mixing bowl, combine the chopped pecans, graham cracker crumbs, powdered sugar, and brown sugar. Stir until well mixed.
  3. Add the melted butter, corn syrup, and vanilla extract. Mix until the ingredients come together to form a dough-like consistency.
  4. Form the balls:
  5. Using a tablespoon or cookie scoop, portion out the mixture and roll it into small balls. Place the balls on a baking sheet lined with parchment paper.
  6. Chill:
  7. Refrigerate the balls for at least 30 minutes to firm up.
  8. Optional chocolate coating:
  9. Melt the chocolate chips or candy melts in a microwave-safe bowl in 20-second intervals, stirring after each, until smooth.
  10. Dip each chilled ball into the melted chocolate, using a fork or dipping tool to ensure an even coating. Place them back on the parchment paper to set.
  11. Serve or store:
  12. Once the chocolate coating is set (if used), the pecan pie balls are ready to serve. Store in an airtight container in the refrigerator for up to a week.
