Preheat Oven:
Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
Make the Dough:
In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
Combine Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Shape the Cookies:
Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in granulated sugar to coat, then place them on the prepared baking sheets about 2 inches apart.
Bake:
Bake for 8-10 minutes, or until the edges are lightly golden but the centers are still soft.
Add the Chocolate Kiss:
Immediately after removing the cookies from the oven, press a chocolate kiss into the center of each cookie. The cookies will crack slightly—this is normal.
Cool and Enjoy:
Let the cookies cool on the baking sheet for a few minutes, then transfer them to a cooling rack to set.
