Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar plus extra for rolling
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 36 chocolate kisses unwrapped

Instructions
 

  • Preheat Oven:
  • Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  • Make the Dough:
  • In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  • Combine Dry Ingredients:
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Shape the Cookies:
  • Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in granulated sugar to coat, then place them on the prepared baking sheets about 2 inches apart.
  • Bake:
  • Bake for 8-10 minutes, or until the edges are lightly golden but the centers are still soft.
  • Add the Chocolate Kiss:
  • Immediately after removing the cookies from the oven, press a chocolate kiss into the center of each cookie. The cookies will crack slightly—this is normal.
  • Cool and Enjoy:
  • Let the cookies cool on the baking sheet for a few minutes, then transfer them to a cooling rack to set.
