Ingredients
  

Fresh Fruits
  • 4 pieces fresh peaches, diced Ensure they are ripe for maximum flavor.
  • 1 cup strawberries, hulled and sliced Use ripe strawberries.
  • 1 cup blueberries
  • 1 cup green grapes, halved
Cheesecake Filling
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup Cool Whip or whipped cream You can use homemade whipped cream.
  • 1/2 teaspoon cinnamon Optional, for a peach cobbler twist.

Preparation
  1. Wash all the fruits thoroughly. Dice the peaches, slice the strawberries, and halve the grapes. In a large mixing bowl, add all the prepared fruits together.
  2. In a separate bowl, beat the softened cream cheese until smooth. Gradually add in the powdered sugar, continuing to beat until combined. Stir in the vanilla extract.
  3. Gently fold in the Cool Whip or whipped cream until you have a smooth, creamy mixture.
  4. Pour the cheesecake filling over the diced fruits, gently folding everything together until nicely mixed, being careful not to mash the fruits.
  5. You can serve the peach cobbler cheesecake fruit salad right away, or cover it with plastic wrap and refrigerate for about 30 minutes to let the flavors meld together.

Notes

Ripeness of fruits is key for flavor. This salad can be made a day in advance, just add any fruits that might brown right before serving. Store leftovers in an airtight container in the fridge for up to two days.
