Peach Caprese Grilled Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 ripe peaches thinly sliced
  • 8 oz 225g fresh mozzarella, sliced
  • Fresh basil leaves
  • Balsamic glaze for drizzling

Instructions
 

  • Prepare the Chicken:
  • In a small bowl, mix olive oil, garlic powder, Italian seasoning, salt, and pepper. Rub this mixture evenly over the chicken breasts.
  • Grill the Chicken:
  • Preheat your grill or grill pan to medium-high heat. Cook the chicken breasts for 6–8 minutes per side, or until they reach an internal temperature of 165°F (74°C). Remove from the grill and let them rest for a few minutes.
  • Assemble the Toppings:
  • Top each chicken breast with slices of fresh mozzarella and peach. Return the chicken to the grill for 1–2 minutes, just until the mozzarella starts to melt.
  • Add Fresh Basil and Balsamic Glaze:
  • Remove the chicken from the grill. Garnish each piece with fresh basil leaves and drizzle generously with balsamic glaze.
  • Serve and Enjoy:
  • Plate the Peach Caprese Grilled Chicken and serve with your favorite sides, like a simple green salad or grilled vegetables.
