Peach Caprese Grilled Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 ripe peaches thinly sliced
  • 8 oz 225g fresh mozzarella, sliced
  • Fresh basil leaves
  • Balsamic glaze for drizzling

Method
 

  1. Prepare the Chicken:
  2. In a small bowl, mix olive oil, garlic powder, Italian seasoning, salt, and pepper. Rub this mixture evenly over the chicken breasts.
  3. Grill the Chicken:
  4. Preheat your grill or grill pan to medium-high heat. Cook the chicken breasts for 6–8 minutes per side, or until they reach an internal temperature of 165°F (74°C). Remove from the grill and let them rest for a few minutes.
  5. Assemble the Toppings:
  6. Top each chicken breast with slices of fresh mozzarella and peach. Return the chicken to the grill for 1–2 minutes, just until the mozzarella starts to melt.
  7. Add Fresh Basil and Balsamic Glaze:
  8. Remove the chicken from the grill. Garnish each piece with fresh basil leaves and drizzle generously with balsamic glaze.
  9. Serve and Enjoy:
  10. Plate the Peach Caprese Grilled Chicken and serve with your favorite sides, like a simple green salad or grilled vegetables.
