Ingredients

  • For the cake batter:
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • For the topping:
  • 3 –4 fresh peaches peeled, pitted, and sliced
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon optional

Equipment

  • 9-inch round or square baking pan
  • Mixing bowls
  • Hand or stand mixer
  • Spatula
  • Whisk

Method

  1. Preheat oven: Preheat your oven to 350°F (175°C). Grease and lightly flour your baking pan or line it with parchment paper.
  2. Prepare the batter:
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, starting and ending with the dry ingredients. Mix until just combined.
  6. Assemble the cake: Pour the batter into the prepared pan, spreading it evenly. Arrange the peach slices on top of the batter in a decorative pattern. Sprinkle with sugar and cinnamon (if using) for a sweet and spiced topping.
  7. Bake: Place the cake in the oven and bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and serve: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Serve warm or at room temperature.
