Ingredients
  

For the Soup
  • 1 cup pastina Tiny pasta, can use stars or alphabets.
  • 4 cups vegetable broth Choose high-quality broth for best flavor.
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 leaf bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, for garnish Optional
  • Grated Parmesan cheese, for serving Optional

Method
 

Preparation
  1. In a large pot, heat a splash of olive oil over medium heat. Add the chopped onions, carrots, and celery. Sauté for about 5 minutes until they soften.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the vegetable broth and bay leaf to the pot. Bring to a gentle boil.
  4. Once boiling, add the pastina. Reduce the heat to low and simmer for about 10-12 minutes, or until the pastina is tender.
  5. Season with salt and pepper to taste. Remove the bay leaf. Ladle the soup into bowls and garnish with fresh parsley and optional grated Parmesan cheese, if desired. Enjoy!
