- In a large pot, heat a splash of olive oil over medium heat. Add the chopped onions, carrots, and celery. Sauté for about 5 minutes until they soften.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the vegetable broth and bay leaf to the pot. Bring to a gentle boil.
- Once boiling, add the pastina. Reduce the heat to low and simmer for about 10-12 minutes, or until the pastina is tender.
- Season with salt and pepper to taste. Remove the bay leaf. Ladle the soup into bowls and garnish with fresh parsley and optional grated Parmesan cheese, if desired. Enjoy!
