Ingredients
  

Main Ingredients
  • 8 oz pasta (your choice, such as spaghetti or penne)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • to taste Salt and pepper
  • 1/4 cup grated Parmesan cheese (optional) For a creamy finish

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil.
  2. Add your pasta and cook according to the package instructions until al dente. Reserve about 1/2 cup of pasta cooking water, then drain the rest.
Sautéing the Ingredients
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to let it brown.
  3. Toss the fresh spinach into the skillet, stirring until wilted, which should take about 2-3 minutes.
Combining and Finishing the Dish
  1. Add the cooked pasta to the skillet, pouring in a splash of the reserved pasta water to help combine everything.
  2. Stir until all ingredients are well mixed, then season with salt and pepper to taste.
  3. If you’re using Parmesan cheese, sprinkle it on top and mix until fully incorporated for an extra creamy finish. Serve hot and enjoy!

Notes

Leftovers can be stored in an airtight container in the refrigerator for about 3 days. Reheat on stovetop with a little olive oil or water. Can also freeze portions for up to 3 months.
