Ingredients
  

Main Ingredients
  • 300 grams 300 grams of pasta (spaghetti, penne, or your choice) Any pasta works well, but spaghetti or fettuccine is recommended.
  • 200 grams 200 grams of fresh spinach, washed and roughly chopped Always use fresh spinach for best texture.
  • 3 tablespoons 3 tablespoons of extra virgin olive oil
  • 4 cloves 4 cloves of garlic, minced Avoid browning the garlic to prevent bitterness.
  • 50 grams 50 grams of grated Parmesan cheese Can be garnished with extra cheese if desired.
  • Salt to taste
  • Freshly cracked black pepper to taste

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve about 1 cup of the pasta water before draining.
Sautéing the Garlic
  1. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant. Be careful not to brown it, as burnt garlic can ruin the flavor.
Adding Spinach
  1. Toss in the chopped spinach. Stir and cook for 3-4 minutes, allowing it to wilt down and release its moisture.
Combining Pasta and Sauce
  1. Once the pasta is done, drain it and add it directly to the skillet with the spinach and garlic. Mix well, and add reserved pasta water a little at a time until you achieve your desired sauce consistency.
Seasoning and Serving
  1. Stir in the grated Parmesan cheese, along with salt and pepper to taste. Serve immediately, garnished with extra cheese or toppings of your choice.

Notes

This dish is easily customizable; sprinkle chili flakes for a spicy kick or add lemon zest for brightness. Store leftovers in the refrigerator for up to 3 days and reheat with a splash of water or olive oil.
