Method
Cooking the Pasta
- Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve about 1 cup of the pasta water before draining.
Sautéing the Garlic
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant. Be careful not to brown it, as burnt garlic can ruin the flavor.
Adding Spinach
- Toss in the chopped spinach. Stir and cook for 3-4 minutes, allowing it to wilt down and release its moisture.
Combining Pasta and Sauce
- Once the pasta is done, drain it and add it directly to the skillet with the spinach and garlic. Mix well, and add reserved pasta water a little at a time until you achieve your desired sauce consistency.
Seasoning and Serving
- Stir in the grated Parmesan cheese, along with salt and pepper to taste. Serve immediately, garnished with extra cheese or toppings of your choice.
Notes
This dish is easily customizable; sprinkle chili flakes for a spicy kick or add lemon zest for brightness. Store leftovers in the refrigerator for up to 3 days and reheat with a splash of water or olive oil.
