  • 12 oz smoked sausage, sliced Look for turkey or chicken versions
  • 8 oz penne pasta Or your favorite pasta type
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, sliced Any color
  • 14.5 oz can diced tomatoes, undrained
  • 2 cups chicken broth Or vegetable broth for a vegetarian version
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated parmesan cheese (optional, for serving)

Method
 

Preparation
  1. Gather all your ingredients. Slice your sausage, chop your onion, and mince your garlic.
Cooking
  1. In a large pot, over medium-high heat, add the sliced smoked sausage. Cook for about 4-5 minutes until browned, stirring occasionally.
  2. Toss in the diced onion, garlic, and sliced bell pepper. Sauté for 3-4 minutes until the vegetables are softened.
  3. Pour in the uncooked pasta, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Stir everything together, bringing it to a gentle boil.
  4. Once boiling, reduce the heat to medium-low, cover with a lid, and let it simmer for about 12-15 minutes, or until the pasta is cooked al dente.
  5. After the pasta is cooked, stir in the heavy cream. Let it cook for another 2-3 minutes until the sauce thickens slightly.
  6. Remove from heat and serve hot, garnished with freshly chopped parsley and a sprinkle of parmesan cheese if desired.
