Preparation
- Gather all your ingredients. Slice your sausage, chop your onion, and mince your garlic.
Cooking
- In a large pot, over medium-high heat, add the sliced smoked sausage. Cook for about 4-5 minutes until browned, stirring occasionally.
- Toss in the diced onion, garlic, and sliced bell pepper. Sauté for 3-4 minutes until the vegetables are softened.
- Pour in the uncooked pasta, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Stir everything together, bringing it to a gentle boil.
- Once boiling, reduce the heat to medium-low, cover with a lid, and let it simmer for about 12-15 minutes, or until the pasta is cooked al dente.
- After the pasta is cooked, stir in the heavy cream. Let it cook for another 2-3 minutes until the sauce thickens slightly.
- Remove from heat and serve hot, garnished with freshly chopped parsley and a sprinkle of parmesan cheese if desired.
Notes
Consider serving your One Pot Smoked Sausage Pasta with a crisp side salad drizzled with balsamic vinaigrette or garlic bread. For freshness, serve with cucumbers or steamed green beans.
