One Pot Chicken and Rice

Ingredients
  

Main Ingredients
  • 1 pound boneless chicken thighs or breasts Choose thighs for more flavor.
  • 1 cup rice (preferably long-grain or jasmine) Rinse before use.
  • 2 cups chicken broth Low sodium recommended.
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (e.g., bell peppers, peas, carrots) Feel free to substitute with your favorites.
  • 1 teaspoon paprika or your favorite seasoning
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • for garnishing fresh herbs (e.g., parsley or cilantro) Chopped.

Method
 

Preparation
  1. Gather all the ingredients listed. Chop the onion and garlic, and cut the chicken into bite-sized pieces.
Sauté Chicken
  1. In a large pot, heat the olive oil over medium heat. Add the chicken pieces, season with salt, pepper, and paprika, and sauté until browned, about 5-7 minutes. Remove the chicken and set aside.
Cook Vegetables
  1. In the same pot, add the chopped onion and garlic. Cook until fragrant and the onion is translucent, about 3-4 minutes.
Combine Rice and Broth
  1. Add the rice to the pot and stir to coat in the oil and onion mixture. Pour in the chicken broth and bring to a boil. Stir in mixed vegetables if desired.
Simmer
  1. Once boiling, reduce the heat to low and add the browned chicken back into the pot. Cover and simmer for about 20 minutes, or until rice is fluffy.
Garnishing
  1. Fluff the rice with a fork and garnish with fresh herbs. Serve and enjoy!

Notes

Leftovers can be stored in an airtight container for 3-4 days. Reheat in the microwave or on the stove with a splash of chicken broth to refresh.
