Preparation
- Gather all the ingredients listed. Chop the onion and garlic, and cut the chicken into bite-sized pieces.
Sauté Chicken
- In a large pot, heat the olive oil over medium heat. Add the chicken pieces, season with salt, pepper, and paprika, and sauté until browned, about 5-7 minutes. Remove the chicken and set aside.
Cook Vegetables
- In the same pot, add the chopped onion and garlic. Cook until fragrant and the onion is translucent, about 3-4 minutes.
Combine Rice and Broth
- Add the rice to the pot and stir to coat in the oil and onion mixture. Pour in the chicken broth and bring to a boil. Stir in mixed vegetables if desired.
Simmer
- Once boiling, reduce the heat to low and add the browned chicken back into the pot. Cover and simmer for about 20 minutes, or until rice is fluffy.
Garnishing
- Fluff the rice with a fork and garnish with fresh herbs. Serve and enjoy!
Notes
Leftovers can be stored in an airtight container for 3-4 days. Reheat in the microwave or on the stove with a splash of chicken broth to refresh.
