Ingredients

Main Ingredients
  • 9 oz tortellini (fresh or frozen)
  • 1 tbsp olive oil
  • 1 lb Halal Italian sausage (sliced)
  • 3 cloves garlic (minced)
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • to taste Salt and pepper

Method

Cooking Instructions
  1. In a large, deep skillet, heat the olive oil over medium heat. Add the sliced Halal Italian sausage and sauté until nicely browned, about 5-7 minutes.
  2. Add the minced garlic and cook for an additional 1-2 minutes until fragrant, ensuring not to burn it.
  3. Add the tortellini to the pan, followed by enough water to cover the pasta (about 2 cups). Allow it to come to a gentle simmer, and cook until the tortellini are al dente according to package instructions.
  4. Reduce the heat to low, and stir in the heavy cream and grated Parmesan cheese. Mix well until the cheese melts and the sauce is creamy.
  5. Toss in the fresh spinach and season with salt and pepper. Cook for an additional minute or until the spinach wilts and brightens.
  6. Plate your pasta masterpiece, add an extra sprinkle of cheese if desired, and dig in!

Notes

For substitutions, use grilled chicken or plant-based sausage for variations. Allow the sausage to get a golden brown crust for optimal flavor. Don’t overcook the tortellini; they should be al dente.
