- Add the tortellini to the pan, followed by enough water to cover the pasta (about 2 cups). Allow it to come to a gentle simmer, and cook until the tortellini are al dente according to package instructions.
- Reduce the heat to low, and stir in the heavy cream and grated Parmesan cheese. Mix well until the cheese melts and the sauce is creamy.
- Toss in the fresh spinach and season with salt and pepper. Cook for an additional minute or until the spinach wilts and brightens.
- Plate your pasta masterpiece, add an extra sprinkle of cheese if desired, and dig in!
Notes
