- Heat a large skillet over medium heat. Add the sliced Cajun sausage and cook until browned, about 5-7 minutes, stirring occasionally.
- Add the chopped onion and bell pepper. Sauté until the vegetables are tender, around 3-4 minutes. Then, add the minced garlic and cook for an additional minute.
- Stir in the rice, diced tomatoes (with their juices), chicken broth, and Cajun seasoning. Season with salt and pepper to taste.
- Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove the skillet from the heat and let it stand, covered, for another 5 minutes. Fluff the rice with a fork, then garnish with sliced green onions if desired.
