  • 1 cup long-grain rice
  • 2 cups chicken broth

  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tablespoon Cajun seasoning

Method
 

Cooking Steps
  1. Heat a large skillet over medium heat. Add the sliced Cajun sausage and cook until browned, about 5-7 minutes, stirring occasionally.
  2. Add the chopped onion and bell pepper. Sauté until the vegetables are tender, around 3-4 minutes. Then, add the minced garlic and cook for an additional minute.
  3. Stir in the rice, diced tomatoes (with their juices), chicken broth, and Cajun seasoning. Season with salt and pepper to taste.
  4. Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Remove the skillet from the heat and let it stand, covered, for another 5 minutes. Fluff the rice with a fork, then garnish with sliced green onions if desired.
  6. Serve hot and enjoy!

Notes

Customize the sausage, add more vegetables, or adjust the spice level to your preference. Perfect for leftovers and can be stored in the fridge for 3-4 days or frozen for up to 3 months.
