  • 1 pound breakfast sausage mild or spicy, based on preference
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk or more for desired consistency
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1/4 teaspoon cayenne pepper or smoked paprika optional, for added flavor

Method
 

  1. Cook the Sausage:
  2. Heat a large skillet over medium heat.
  3. Add the breakfast sausage, breaking it into small crumbles with a wooden spoon or spatula.
  4. Cook until browned and fully cooked through, about 8–10 minutes.
  5. Add the Flour:
  6. Reduce the heat to low. Sprinkle the flour evenly over the cooked sausage.
  7. Stir continuously, ensuring the sausage is well coated with the flour.
  8. Let the mixture cook for 1–2 minutes to remove the raw flour taste.
  9. Add the Milk:
  10. Gradually pour in the milk while whisking to prevent lumps from forming.
  11. Increase the heat to medium and stir constantly until the mixture begins to thicken, about 5–7 minutes.
  12. Season the Gravy:
  13. Stir in the salt, black pepper, and cayenne pepper or smoked paprika (if using).
  14. Taste and adjust seasoning as needed.
  15. Serve Warm:
  16. Once the gravy has reached your desired consistency, remove it from the heat.
  17. Serve immediately over warm, flaky biscuits.
