Ingredients
  

  • 1 pound breakfast sausage mild or spicy, based on preference
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk or more for desired consistency
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1/4 teaspoon cayenne pepper or smoked paprika optional, for added flavor

Instructions
 

  • Cook the Sausage:
  • Heat a large skillet over medium heat.
  • Add the breakfast sausage, breaking it into small crumbles with a wooden spoon or spatula.
  • Cook until browned and fully cooked through, about 8–10 minutes.
  • Add the Flour:
  • Reduce the heat to low. Sprinkle the flour evenly over the cooked sausage.
  • Stir continuously, ensuring the sausage is well coated with the flour.
  • Let the mixture cook for 1–2 minutes to remove the raw flour taste.
  • Add the Milk:
  • Gradually pour in the milk while whisking to prevent lumps from forming.
  • Increase the heat to medium and stir constantly until the mixture begins to thicken, about 5–7 minutes.
  • Season the Gravy:
  • Stir in the salt, black pepper, and cayenne pepper or smoked paprika (if using).
  • Taste and adjust seasoning as needed.
  • Serve Warm:
  • Once the gravy has reached your desired consistency, remove it from the heat.
  • Serve immediately over warm, flaky biscuits.
