Ingredients

Vegetables
  • 1 small head green cabbage, finely shredded
  • 1 medium carrot, grated You can also use a mix of colorful carrots for variety.
  • 2 tablespoons apple cider vinegar
Dressing
  • 1 cup mayonnaise For a healthier option, mix with Greek yogurt.
  • 1 tablespoon sugar
Optional Garnish
  • to taste thinly sliced green onions Adds a nice touch and extra flavor.

Method

Preparation
  1. Rinse the cabbage thoroughly to remove any dirt. Remove the outer leaves and finely shred the cabbage into thin strips.
  2. Grate the medium carrot and set aside.
Making the Dressing
  1. In a medium bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth and well combined.
Mixing
  1. In a large mixing bowl, combine the shredded cabbage and grated carrot. Pour in the creamy dressing and mix everything well until the vegetables are fully coated.
Tasting and Adjusting
  1. Give it a taste! Adjust the seasoning if needed by adding extra salt, pepper, or sugar to suit your preferences.
Chilling
  1. For the best flavor, let your coleslaw chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld beautifully.
Serving
  1. Garnish with sliced green onions if desired and enjoy your fresh, creamy coleslaw!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Best enjoyed fresh as the cabbage may release water over time.
