Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the rolled oats, all-purpose flour, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Gently fold in the chocolate chips using a spatula.
- Using a tablespoon or cookie scoop, drop balls of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Once baked, let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
