  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the rolled oats, all-purpose flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Gently fold in the chocolate chips using a spatula.
  7. Using a tablespoon or cookie scoop, drop balls of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Once baked, let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, ensure butter is softened but not melted. Mix dry ingredients gently to avoid tough cookies. Store in an airtight container for up to a week.
