Step 1: Prepare Your Dish
Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.
Step 2: Make the Peanut Butter Mixture
In a medium saucepan, combine the corn syrup and granulated sugar. Heat over medium heat, stirring frequently, until the sugar dissolves and the mixture just begins to bubble (do not boil).
Remove from heat and stir in the peanut butter and vanilla extract until smooth.
Step 3: Combine with Cereal
In a large mixing bowl, pour the peanut butter mixture over the Rice Krispies cereal.
Gently fold together until the cereal is evenly coated.
Step 4: Press Into the Dish
Transfer the mixture to the prepared baking dish.
Use a spatula or lightly greased hands to press it firmly and evenly into the dish.
Step 5: Add the Chocolate Topping
Melt the chocolate chips with coconut oil (if using) in a microwave-safe bowl in 20-second intervals, stirring until smooth.
Spread the melted chocolate evenly over the cereal layer.
Step 6: Chill and Slice
Refrigerate the dish for about 30 minutes, or until the chocolate is set.
Once firm, lift the treats out using the parchment paper and cut into squares or bars.
