Ingredients
  

  • 3 cups Rice Krispies cereal
  • 1/2 cup creamy peanut butter
  • 1/2 cup light corn syrup or honey for a natural option
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil optional, for smoother chocolate topping

Instructions
 

  • Step 1: Prepare Your Dish
  • Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  • Step 2: Make the Peanut Butter Mixture
  • In a medium saucepan, combine the corn syrup and granulated sugar. Heat over medium heat, stirring frequently, until the sugar dissolves and the mixture just begins to bubble (do not boil).
  • Remove from heat and stir in the peanut butter and vanilla extract until smooth.
  • Step 3: Combine with Cereal
  • In a large mixing bowl, pour the peanut butter mixture over the Rice Krispies cereal.
  • Gently fold together until the cereal is evenly coated.
  • Step 4: Press Into the Dish
  • Transfer the mixture to the prepared baking dish.
  • Use a spatula or lightly greased hands to press it firmly and evenly into the dish.
  • Step 5: Add the Chocolate Topping
  • Melt the chocolate chips with coconut oil (if using) in a microwave-safe bowl in 20-second intervals, stirring until smooth.
  • Spread the melted chocolate evenly over the cereal layer.
  • Step 6: Chill and Slice
  • Refrigerate the dish for about 30 minutes, or until the chocolate is set.
  • Once firm, lift the treats out using the parchment paper and cut into squares or bars.
