No-Bake Chocolate Oatmeal Cookies Recipe

Ingredients
  

  • 1/2 cup 1 stick unsalted butter
  • 2 cups granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup whole milk
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 3 cups quick oats
  • Pinch of salt

Instructions
 

  • Prepare Your Work Area:
  • Line a baking sheet with parchment paper or a silicone mat to prevent sticking.
  • Make the Chocolate Mixture:
  • In a medium saucepan, combine the butter, sugar, cocoa powder, milk, and a pinch of salt. Heat over medium heat, stirring constantly, until the mixture comes to a rolling boil. Let it boil for 1 minute while continuing to stir.
  • Add Peanut Butter and Vanilla:
  • Remove the saucepan from heat. Stir in the peanut butter and vanilla extract until fully melted and smooth.
  • Combine with Oats:
  • Add the quick oats to the saucepan and mix thoroughly until the oats are evenly coated with the chocolate mixture.
  • Shape the Cookies:
  • Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet. Flatten slightly with the back of the spoon if desired.
  • Set the Cookies:
  • Allow the cookies to cool and set at room temperature for about 30 minutes, or place them in the refrigerator for faster setting.
