Preparation
- In a medium bowl, combine graham cracker crumbs with melted butter. Mix until evenly coated, and press into the bottom of a 9-inch springform pan.
- Refrigerate the crust to set while preparing the filling.
Filling
- In a large mixing bowl, beat softened cream cheese and powdered sugar until smooth and creamy. Add vanilla extract and mix well.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
Assembly
- Pour the filling over the prepared crust and spread evenly. Top with sliced strawberries, pressing them lightly into the filling.
- Cover with plastic wrap and refrigerate for at least 4-6 hours, or overnight for best results.
Serving
- Remove from the springform pan, garnish with additional strawberries, and enjoy!
