Morning Glory Muffins Recipe

Ingredients
  

  • Dry Ingredients:
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • Wet Ingredients:
  • 3 large eggs
  • 2/3 cup vegetable oil or melted coconut oil
  • 1/3 cup applesauce
  • 2 teaspoons vanilla extract
  • Mix-Ins:
  • 1 1/2 cups grated carrots about 2 large carrots
  • 1 medium apple grated
  • 1/2 cup shredded coconut
  • 1/2 cup raisins
  • 1/2 cup chopped nuts walnuts or pecans

Instructions
 

  • Preheat the Oven:
  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with cooking spray.
  • Combine Dry Ingredients:
  • In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, and salt.
  • Mix Wet Ingredients:
  • In another bowl, whisk the eggs, oil, applesauce, and vanilla extract until well combined.
  • Add Mix-Ins:
  • Stir the grated carrots, apple, coconut, raisins, and nuts into the wet ingredients.
  • Combine Wet and Dry Ingredients:
  • Gradually fold the wet mixture into the dry ingredients until just combined. Avoid overmixing to keep the muffins tender.
  • Fill Muffin Tin:
  • Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake:
  • Bake for 20–25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Cool and Serve:
  • Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
