Preheat the Oven:
Set your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.
Mix Wet Ingredients:
In a large bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until smooth. Add the eggs and vanilla extract, beating until combined.
Combine Dry Ingredients:
In a medium bowl, whisk together the oats, flour, baking soda, and salt.
Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Fold in the Mix-ins:
Gently fold in the chocolate chips and candy-coated chocolates with a spatula.
Shape the Cookies:
Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets, spacing the cookies about 2 inches apart.
Bake:
Bake for 10–12 minutes or until the edges are lightly golden. The centers will still look slightly underbaked but will firm up as they cool.
Cool:
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
