Ingredients
  

For the Meatloaf
  • 1 pound Ground beef Use lean ground beef for best results.
  • 1/2 cup Breadcrumbs
  • 1 large Egg Bind the mixture together.
  • 1 Onion, finely chopped
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/4 cup Ketchup Plus more for topping if desired.
For the Frosting
  • 2 cups Mashed potatoes Prepared beforehand.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, chopped onion, garlic powder, salt, pepper, and ketchup. Mix well but don't overmix.
Cooking
  1. Fill each muffin cup with the meat mixture, pressing lightly to shape.
  2. Bake for 20-25 minutes or until the meat is thoroughly cooked and browned on top.
Frosting
  1. Once muffins cool slightly, frost them with prepared mashed potatoes using a piping bag or spoon.
Serving
  1. Drizzle extra ketchup on top or sprinkle herbs for garnish if desired.

Notes

For a healthier version, substitute ground turkey or chicken. Ensure not to overmix to keep muffins tender. Store leftovers in an airtight container for up to three days; can freeze for up to three months.
