  • 1 box Rice-A-Roni, any flavor you prefer
  • 2 cups shredded cooked chicken (rotisserie chicken works great!)
  • 1 cup cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chopped onion
  • 1/2 cup milk
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • To taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, prepare the Rice-A-Roni according to the package instructions, set aside once done.
  3. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, milk, chopped onion, and half of the shredded cheese. Mix well.
  4. Add the cooked Rice-A-Roni to the mixture and stir until all ingredients are well combined.
  5. Season with salt and pepper to taste.
  6. Transfer the mixture into a greased 9×13-inch baking dish.
  7. Sprinkle the remaining cheese on top, followed by the breadcrumbs mixed with olive oil.
  8. Bake in the preheated oven for about 25-30 minutes or until the cheese is bubbly and golden.
  9. Let it cool slightly before serving.

To elevate your dish, consider ingredient swaps like using peas or bell peppers instead of onions, adding more sour cream for creaminess, and checking for doneness carefully to avoid overbaking.
