- Preheat your oven to 350°F (175°C).
- In a large pot, prepare the Rice-A-Roni according to the package instructions, set aside once done.
- In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, milk, chopped onion, and half of the shredded cheese. Mix well.
- Add the cooked Rice-A-Roni to the mixture and stir until all ingredients are well combined.
- Season with salt and pepper to taste.
- Transfer the mixture into a greased 9×13-inch baking dish.
- Sprinkle the remaining cheese on top, followed by the breadcrumbs mixed with olive oil.
- Bake in the preheated oven for about 25-30 minutes or until the cheese is bubbly and golden.
- Let it cool slightly before serving.
