  • 2 cups cooked chicken, shredded You can use leftover or rotisserie chicken.
  • 1 box Rice-A-Roni, any flavor (6 oz)
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese (your choice) Cheddar, Monterey Jack, or mozzarella work well.
  • 1/2 cup onion, chopped
  • 1/4 cup milk
  • to taste Salt and pepper
  • optional Chopped fresh parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare the Rice-A-Roni according to the package instructions and set aside.
  3. In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, shredded cheese, chopped onion, milk, and the cooked Rice-A-Roni. Mix until well blended.
  4. Season to taste with salt and pepper.
  5. Pour the mixture into a greased baking dish, spreading it evenly.
  6. Place in the preheated oven and bake for about 25-30 minutes, or until bubbly and golden brown on top.
  7. Remove from the oven, let cool for a few minutes, and garnish with fresh parsley before serving.

Notes

For fewer dishes, consider making a one-pot version in a Dutch oven. Refrigerate leftovers in an airtight container for 3-4 days or freeze for longer storage. Reheat at 350°F until warmed through.
