  • 1 teaspoon garlic powder

  • 1 piece red bell pepper, sliced
  • 1 piece zucchini, sliced

Method
 

Preparation
  1. In a large bowl, combine olive oil, dried oregano, garlic powder, lemon juice, salt, and pepper. Add chicken thighs to the marinade, ensuring they are coated evenly. Let marinate for at least 30 minutes, or ideally overnight.
  2. Preheat your oven to 400°F (200°C).
  3. In a separate bowl, toss cherry tomatoes, red bell pepper, and zucchini with a drizzle of olive oil and a pinch of salt and pepper.
Cooking
  1. After marinating, place the chicken thighs on a lined baking sheet and surround them with the prepared vegetables.
  2. Bake in the preheated oven for 35–40 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy.
  3. Remove from the oven and let rest for a few minutes. Garnish with chopped fresh parsley before serving.

Notes

For optimal flavor, allow longer marination. Avoid opening the oven too soon to ensure the chicken cooks thoroughly. Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 2 months.
