Ingredients

Dry Ingredients
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 ½ cups sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
Decoration
  • Food coloring (optional, for icing)
  • Decorative sprinkles and toppings of choice

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, use a hand mixer or stand mixer to beat together the softened butter and sugar until it becomes light and fluffy. This should take about 3-4 minutes.
  4. Beat in the egg, vanilla extract, and almond extract until well combined.
  5. Gradually add the dry ingredients into the butter mixture, ensuring not to overmix. Just until the dough comes together is perfect!
  6. For best results, let the dough chill in the refrigerator for at least 30 minutes.
  7. Roll out the dough on a lightly floured surface to about ¼ inch thick. Use cookie cutters in fun shapes and lay them on a parchment-lined baking sheet.
Baking
  1. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
Decorating
  1. Once cooled, use icing and toppings to decorate your cookies!

Notes

For optimal freshness, store your cookies in an airtight container at room temperature for up to a week. Cookies can be frozen in a single layer before transferring them to a freezer-safe bag; they keep well for up to three months. Reheat in the oven for a few minutes.
