  • 1 cup shredded cheese (cheddar, mozzarella, or your favorite) Customizable based on preference.
  • 1/2 cup sour cream
  • 2 pieces green onions (sliced)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the muffin tin

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Grease a muffin tin with cooking spray or oil.
  3. In a mixing bowl, combine mashed potatoes, half of the shredded cheese, sour cream, green onions, salt, and pepper. Stir until well blended.
  4. Scoop the potato mixture into each muffin cup, filling them to the top.
  5. Sprinkle the remaining cheese on top of each potato cup.
  6. Bake for about 20-25 minutes until the tops are golden and the edges are crispy.
  7. Let the cups cool for a few minutes before removing them from the muffin tin. Serve warm.

Notes

These Mashed Potato Cups can be customized with toppings like crumbled bacon, herbs, or guacamole. Store leftovers in an airtight container in the fridge for up to three days, or freeze for two months. Reheat in an oven or microwave.
