Ingredients
  

Vegetables
  • 2 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 ripe mango, diced Choose ripe mangoes that are slightly soft for the sweetest flavor.
  • 1/4 cup chopped fresh cilantro
Dressing
  • 1 tablespoon honey Can be substituted with maple syrup for a vegan option.
  • 1 juice of 1 lime
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the shredded cabbage and carrots.
  2. Gently fold in the diced mango, taking care not to mush it.
Making the Dressing
  1. In a small bowl, whisk together the lime juice, honey, salt, and pepper until well combined.
Combine and Serve
  1. Pour the dressing over the cabbage, carrots, and mango and mix until everything is evenly coated.
  2. Fold in the chopped cilantro for a fresh flavor boost!
  3. Enjoy immediately, or let it sit for 10-15 minutes in the fridge to allow flavors to meld.

Notes

This slaw pairs wonderfully with grilled chicken or fish, tacos, or can be tossed into a wrap. For best flavor and texture, mix the vegetables and dressing separately until just before serving. Store leftovers in an airtight container in the refrigerator for up to 2 days.
