Prep the Fish:
Pat the Mahi Mahi fillets dry with a paper towel. Season both sides with salt, pepper, paprika, and garlic powder.
Sear the Fish:
Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the Mahi Mahi fillets. Sear for 3–4 minutes on one side, then flip and cook for another 3–4 minutes, or until the fish is golden brown and flakes easily with a fork. Remove from the skillet and set aside.
Alternative Option – Baking:
Preheat your oven to 400°F (200°C). Place seasoned fillets in a greased baking dish and bake for 12–15 minutes, or until the fish is cooked through and flakes easily.
Make the Lemon Garlic Butter Sauce:
In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Stir in the lemon juice and red pepper flakes (if using) and cook for another 1–2 minutes. Remove from heat and stir in the fresh parsley.
Serve:
Pour the lemon garlic butter sauce over the cooked Mahi Mahi fillets. Garnish with additional parsley or lemon zest, if desired. Serve immediately.
