Ingredients

Main Ingredients
  • 1 cup sugar
  • 1 cup milk Can be substituted with almond or coconut milk.
  • 1/2 cup butter, melted Or halal-friendly margarine.
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup water

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a medium-sized baking dish with a little butter or cooking spray.
  3. In a large mixing bowl, combine the sugar, milk, melted butter, lemon juice, and lemon zest. Stir until well-blended.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  5. Mix in the water, giving the batter a lovely thinner consistency.
  6. Pour the batter into your prepared baking dish. Don’t worry if it looks a bit runny; that’s part of the magic!
  7. Place the dish in the preheated oven and bake for about 40 minutes or until the top is golden brown and bubbly.
  8. Remove from the oven and let it cool for a few minutes before serving warm. Top with ice cream or whipped cream if desired!

Notes

Substitutions include using almond milk or coconut milk for dairy-free options. Accurate measurements are essential for maintaining the balance of flavors. If you have leftovers, store in an airtight container in the refrigerator for up to 3 days, or freeze for up to 1 month. To reheat, thaw in the refrigerator overnight and warm in the oven for 10-15 minutes.
