  • 1 cup fresh tomatoes, diced Use fresh, ripe tomatoes.
  • 1/2 cup sliced jalapeños (fresh or pickled) Adjust based on spice preference.
  • 1/2 cup sour cream (for topping) Serve on the side.
  • 1/4 cup fresh cilantro, chopped (for garnish) Add just before serving.
  • 1/2 cup salsa (optional) Can be served on the side.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Spread the tortilla chips evenly on a large baking sheet or oven-safe dish, ensuring they overlap slightly for full coverage.
  3. Sprinkle half of the shredded cheese over the chips followed by the black beans, diced tomatoes, jalapeños, and any additional toppings you desire. Finish by adding the remaining cheese on top.
Baking
  1. Put the baking sheet in the oven and bake for about 15 minutes, or until the cheese is bubbly and slightly golden.
Serving
  1. Once baked, take it out of the oven and let it cool for a minute or two. Serve with sour cream and salsa on the side, then sprinkle fresh cilantro on top.
