Ingredients
  

Main Ingredients
  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, cooked rice, drained corn, drained black beans, 1 cup of shredded cheese, sour cream, cream of chicken soup, taco seasoning, salt, and pepper. Stir until all ingredients are well mixed.
  3. Pour the mixture into a greased 9×13 inch baking dish or a casserole dish of similar size. Spread it out evenly.
Baking
  1. Sprinkle the remaining cheese on top of the casserole.
  2. Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and bubbly.
Garnishing & Serving
  1. Once out of the oven, let it cool for a few minutes. If you like, garnish with chopped green onions for an extra flourish.
  2. Serve it warm and enjoy the loveliness of family time around the dinner table!

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Freeze for up to 2 months. Reheat in the oven at 350°F (175°C) for 20-25 minutes or microwave individual portions for 2-3 minutes.
