Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine shredded chicken, cooked rice, drained corn, drained black beans, 1 cup of shredded cheese, sour cream, cream of chicken soup, taco seasoning, salt, and pepper. Stir until all ingredients are well mixed.
- Pour the mixture into a greased 9×13 inch baking dish or a casserole dish of similar size. Spread it out evenly.
Baking
- Sprinkle the remaining cheese on top of the casserole.
- Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and bubbly.
Garnishing & Serving
- Once out of the oven, let it cool for a few minutes. If you like, garnish with chopped green onions for an extra flourish.
- Serve it warm and enjoy the loveliness of family time around the dinner table!
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days. Freeze for up to 2 months. Reheat in the oven at 350°F (175°C) for 20-25 minutes or microwave individual portions for 2-3 minutes.
