  • 1 lb ground beef or chicken (Halal)
  • 1 medium onion, finely chopped
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1 cup cooked beans (black or pinto)
  • 1 tsp garlic powder
  • 1 tsp cumin
  • ½ tsp paprika

  • 2 cups taco sauce (mild or spicy)
  • 8 tortillas (flour or corn)

Preparation
  1. In a large skillet over medium heat, add the ground beef or chicken and chopped onion. Cook until the meat is browned and the onion is translucent. Drain off any excess fat.
  2. Stir in the garlic powder, cumin, paprika, and season with salt and pepper. Mix well! Add the cooked beans and half of the taco sauce, stirring until everything is heated through.
Assembly
  1. Lay a tortilla flat on a clean surface. Add a generous scoop of the meat and bean mixture in the center, then sprinkle a handful of shredded cheese on top.
  2. Carefully fold the tortilla over, creating a pocket. Press it down gently to seal.
Cooking
  1. In a non-stick skillet, add a bit of oil over medium heat. Cook each taco for about 3-4 minutes on each side or until golden and crispy.
  2. Remove from the skillet and let cool slightly.
Serving
  1. Drizzle with the remaining taco sauce and top with chopped cilantro and diced tomatoes.
