Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the yogurt, sugar, eggs, vegetable oil, and vanilla extract until well combined and smooth.
- In another bowl, sift together the flour, baking powder, and salt.
- Gradually fold the dry ingredients into the wet mixture, being careful not to over-mix.
- Grease a 9-inch round cake pan with oil or non-stick spray and pour the batter into the pan.
Baking
- Place the cake in the oven and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Serving
- After cooling, slice the cake and serve with your favorite toppings.
Notes
For substitutions, use Greek yogurt for a thicker texture or plant-based yogurt for a vegan version. Store in an airtight container for up to 3 days at room temperature or 1 week in the fridge. Freezing individual slices can last up to 3 months.
