Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the yogurt, sugar, eggs, vegetable oil, and vanilla extract until well combined and smooth.
  3. In another bowl, sift together the flour, baking powder, and salt.
  4. Gradually fold the dry ingredients into the wet mixture, being careful not to over-mix.
  5. Grease a 9-inch round cake pan with oil or non-stick spray and pour the batter into the pan.
Baking
  1. Place the cake in the oven and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Serving
  1. After cooling, slice the cake and serve with your favorite toppings.

Notes

For substitutions, use Greek yogurt for a thicker texture or plant-based yogurt for a vegan version. Store in an airtight container for up to 3 days at room temperature or 1 week in the fridge. Freezing individual slices can last up to 3 months.
