  • 1/2 cup vegetable oil

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper for easy removal.
  • In a large bowl, combine the plain yogurt, sugar, and vegetable oil. Mix until smooth. Then add the eggs, one at a time, mixing well after each.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; it’s okay if a few lumps remain.
  • Stir in the vanilla extract for added depth of flavor.

Baking

  • Pour the batter into the prepared cake pan and smooth out the top.
  • Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Serving

  • Once cooled, dust with powdered sugar and top with fresh fruit if desired. Serve and enjoy!

Notes

For best texture, use room temperature ingredients and do not overmix the batter.
